Crock Pot Chicken

Well, I didn’t get to making that crock pot chicken until tonight but it’s cooking up for tomorrow’s lunch & future meals. I can’t wait to taste it! So, in classic Krez style, here’s what I did:

First, I put a whole chicken in my crock pot. I used a roasting chicken instead of a frying chicken.

Then, I added the seasoning. I’m not sure how much of each because I season by eye but here are the spices/herbs I used – Ana’s Herbs (for whatever reason, this website only seems to work on MS IE…BOO!!), celery salt, cayanne pepper, basil, and a bay leaf.

I cubed 2 baking potatoes and 1 onion and added them in. I also added about 4 cups of water.

Can’t forget the garlic! 1 clove, minced.

Cook all that on high heat for a few hours. Once this has all cooked down a bit, I’m going to add in carrots, mushrooms and frozen okra and let it cook on low overnight.

So, it should be ready for me to pack myself a yummy lunch tomorrow. If I leave it on warm all day tomorrow, it should definitely fall off the bone by dinner time. Hopefully, the final meal will picture well – if so, I’ll send a copy to composer and food pic blogger John Mackey. I can’t wait to taste it!!

Lovin’ the weather. It won’t get above 75 degrees today, I don’t think! THANK GOODNESS FOR YESTERDAY’S RAIN!!!

I chatted with Evan Morgan for a long time today. It was GREAT to chat realtime with him. He’s overseas, outside Kabul, Afghanistan, stationed with the US Army (despite his being Air Force) training the Afghan National Army do to the things he does in his job with the USAF. He says it’s been pretty peaceful there, except one recent incident…but no one was killed. If you know Evan, I’m sure he’d appreciate any and all communication he can get during the “down time” he gets. He’s 9 1/2 hours ahead of us time wise and he gets a bit of down time each evening. Let me know and I’ll be more than happy to send you his email address.

Other than that, I’m just cleaning around the house and doing laundry today. My dad’s coming over to help install a water filtration system in my kitchen. I love doing projects like that with my dad. 😀 Regular Sunday dinner club tonight. *YUMMY*

I hate a tease!

It wants to rain outside. The sky keeps going from bright to dark and the wind is picking up often. I think the humidity outside is around 85% but unfortunately, 84 degrees so I don’t think we’ll get any rain quite yet.

The boys came by and mowed my yard today (I’ve decided to let them do it during marching season) so a nice rain would be really good for it. Hopefully, it’ll cool down this evening so the moisture particles in the air will gather and it will rain.

It’s been a long week and I’ve got some housework to do this weekend (when DON’T I have housework to do?). I’m going to chill out as much as I can, though.
