Vacation!!

It’s pretty much official, I’m on vacation! Actually, today will be day 2 of it. I’m so glad to have a few days of rest and opportunities to catch up around the house. I do have a few times I’ll have to go up to work but hopefully, they’ll either be short and easy or fun or fulfilling. It’s been quite a busy and full fall semester and I know that the spring won’t be much different so I plan on making the most of this time off.

Yesterday, Naomi walked the stage at St. Edward’s University with her Masters Degree and we are all so proud of her. Also, Stacy just graduated from Texas Tech Nursing School but unfortunately, since they only have the graduation ceremonies in May and she’ll be 7 months pregnant by that point, we’ll have to throw her a graduation ceremony/baby shower locally so she can waddle for us. 😉 Here’s our Grey’s Girls at graduation:

From left to right, we have Sarah, Monica, Naomi, Stacy and me. Most everyone is sticking around these next few weeks so I’m sure that aside from our regular Thursday night gatherings, there will be a few other fun days on various outings and gatherings as well.

These next few weeks off will definitely fly by so I’m going to try to make the best of it. If you’re in Austin and want to hang out, give me a buzz. I’ll be doing a lot of cooking, hopefully, so come over and I’ll cook for ya!

The Pursuit of Happyness

This movie is based on real life events of Chris Gardner who started out in dire straights and couldn’t seem to find a break in life. He loves his son and because he grew up without a father, he does whatever he can to make sure his son doesn’t grow up in the same situation. Chris and his son experience many difficult challenges, including homelessness, while Chris goes through an unpaid stock and bond market internship trying to get the one and only spot available with Dean Witter.

This movie is based on real life events and there is a book of the same name by the real Chris Gardner but after reading a synopsis of the book, they’ve obviously changed the story a bit when they made the movie. Because Will Smith’s son is cast as Chris Gardner’s son, the father-son chemistry is definitely authentic. This man’s determination and belief in himself is amazing and inspiring and regardless of mixed reviews of Will Smith’s portrail, it’s worth seeing the movie. Very inspiring.4 out of 5 stars.

Yummy Mushroom Soup

The other day, I was at the HEB Plus and they had a sample of some cream of mushroom soup available. It was chock full of fresh mushrooms and other good flavors. It was a packaged soup mix thing and being that I was actually there running errands for school, I really didn’t have time to take a look at the packaging or even ask if it was available in any other HEB. Tonight, I was really thinking about how yummy that soup was and I really wanted some but I couldn’t find anything that resembled what could have been that mix at my local HEB so I decided I wanted to recreate it.

I got a package of cleaned and sliced fresh mushrooms, melted a pat of butter in the bottom of a pot, minced two cloves of garlic and added that as well as the sliced mushrooms to the butter. Once that was sauted down, I added a family sized can of Campbell’s Cream of Mushroom Soup in. I also added a 1/2 can of milk & 1/2 can of water and stirred it until it was all heated. And that’s it.

It’s a really good addition to plain cream of mushroom soup. Next time, I might mince a 1/2 an onion and sauted that in with the garlic. Maybe some chicken….
