About those Christmas decorations….

It’s January 6 and the today is the 12th day of Christmas and I figure many people will take down their decorations this coming weekend. I’m not sure what’s different about this year but when I’m driving or walking through my neighborhood and I see houses still lit up, I keep thinking, “why are they STILL up??”. Maybe it’s because I didn’t put up any decorations this year. Okay, I did get an official “Charlie Brown Christmas Tree” and put it up after Christmas (I couldn’t resist having it and not putting it up) but I’ve put that away already. Maybe it’s because the weather is bright and warm again. Maybe I really never felt the Christmas spirit so much this time around. 2010 was a pretty bah humbug kind of year. Who knows, I’m just ready for the decorations to come down. Let’s move onto other things. HEB has…. 😉

About last year.

You know, I was going to blog about last year and after some pondering and hashing through sad memories, I’m glad that we are closing out 2010! Good riddance!

Hopefully, 2011 will bring about happier things to blog about. If anything, I’ll continue to cook and blog about it. Stay tuned because I’m going to make 2011 an amazing year – even if it turns my hair grey. 😉 Happy New Year everyone!

Pizza dough flatbread

I saw this easy recipe on The Today Show but since their website can be hard to search, I’m going to archive the recipe/method here. I’m going to certainly use the store-bought method at our next gathering. Maybe with the ranch spinach dip I just blogged about!

Flatbreads (if making from scratch)
1/4 cup whole-wheat flour
3 1/2 cups all-purpose flour
2 teaspoons yeast
2 teaspoons kosher or sea salt
2 teaspoons evoo (extra-virgin olive oil)
2 tablespoons fennel seeds
1 2/3 cups warm water

Store-bought
If store-bought, cut into small balls and let rest at room temperature. On a lightly floured work surface, roll dough out as thinly as possible (almost see-through). Sprinkle with fennel seeds and roll a few times to “secure” them. Cut into strips or triangles or leave whole. Lay onto oiled sheet trays and drizzle with more oil. Bake at 400 degrees for 6-8 minutes until lightly browned and crunchy. Cool and serve.

If making from scratch
In the bowl of a standing mixer combine flours with dough hook attachment. Add remaining ingredients and “knead” in the mixer for about 3 minutes. Remove hook. Cover and let rise by double — about 30 minutes. Separate into 4 or 5 balls and let rest 30 minutes. Heat oven to 400 degrees. On a lightly floured work surface, roll dough out as thinly as possible (almost see-through). Cut into strips or triangles or leave whole. Lay onto oiled sheet trays and drizzle with more oil. Bake 6-8 minutes until lightly browned and crunchy. Cool and serve.

It’s official – FINALLY!

My blog is now, officially found at http://bigbenford.co.uk. I think I have to resign to the fact that I’ve lost bigbenford.com forever. :(. But fear not, I’m tapping into my British roots and have this new URL all set up and for quite an inexpensive total price. Right around $35, if my estimating maths is correct. My dad always says maths so tapping into my British roots with this new URL, I’m going with the “s”.

The picture at the top of the blog is a picture of a squash flower I had growing in my backyard this summer. No, not in my garden but in my compost, actually. The squash that came from the plant was delicious, too! And I can honestly say it was undoubtedly organic.

The last thing I have to wait for in this technological process is for my DNS record to reset itself so I can start getting my email on my computer again. I guess I can give a quick outline of what I had to do to make all this happen. In list form, it seems quite simple but it takes a bit of reading instructions, following instructions and then waiting for such instructions to “take”.

  • My actual blog is hosted at wordpress.com.
  • My domain name is registered at ipower.com.
  • I first pointed my domain to my blog via ipower’s website.
  • I then purchased an upgrade at WordPress.com to be able to map my domain name to my blog on their server. Part of that included resetting my nameserver at ipower to wordpress. That takes a few hours to take effect, btw.
  • I then had to customize my DNS record in my wordpress account so it points my email back to ipower’s servers. That’s what I’m waiting on now to take effect…and it just did.
  • By the way, all the information I’m sharing with you is public information so anyone wondering if I’ve said too much, don’t worry. If you have a blog or website, all this information about you can be looked up at whois.net. Domain/web hosting companies don’t necessarily “like” when you change your nameservers and DNS records. They want to host everything. But ipower’s tech support chat folks have the information I need and are willing to answer my questions so I’m very fortunate. Go Daddy’s folks would have charged me an arm and a leg to give me any information then they would have given me wrong information. (yes, I’m still bitter).

    So that’s it! I’m all set and ready to blog again. I have recently, too. Go check it out.
